Who would have thought mixing chick peas and beets together would be so refreshing. I like to create to taste. Here are some simple steps to creating a yummy dish of beet hummus. Goes well with almond bread or tortilla chips, carrots or celery.
You will need:
-15 oz garbanzo (chick peas)
-half teaspoon of ground cumin
-garlic powder or salt to your taste
– cup of cooked sliced beets (farmer’s markets are best)
-tblspoon of lemon juice of 3 drops of lemon oil
-tblspoon extra virgin olive oil
-water as needed
Bring pan to boil. Add fresh produce beets and boil for 1 hour. Drain.
Let soak in cold water to cool.
(or 15oz. can of beets)

Drain and rinse chick peas. Pour chickpeas onto kitchen towel. Cover with other half of towel and rub the skins off.
Put the peeled chickpeas in the bowl of a food processor

Add cumin, garlic, and beets. Turn on processor to break up the mixture.
Pause to add lemon juice or oil and olive oil. Add water to the texture you desire.
Serve.
